Healthy chicken and rice Recipes

 A simple, healthful one-pot dish for chicken and rice that will completely relieve the burden of cooking throughout the workweek.

Ingredients:

  1. 1 tbsp olive oil
  2. 800g/1lb 12oz bone-in chicken thighs (approximately 4 large chicken thighs)
  3. 1 large onion, roughly chopped
  4. 2 garlic cloves, chopped
  5. 2 large carrots, finely chopped
  6. 2 tsp cumin seeds
  7. ½ tsp smoked paprika
  8. 250g/9oz basmati or long-grain rice
  9. 600ml/1 pint chicken stock
  10. large handful chopped dill, plus extra to garnish
  11. salt and freshly ground black pepper


Instructions:

Step:NO:01

Turn the oven on to 200°C (180°F fan) or Gas 6.

Step:NO:02

Warm up the oil in a big, ovenproof casserole with a cover. When the chicken is brown on all sides, add it and stir-fry it for ten to twelve minutes. Empty all but a tablespoon of the cooking fluids from the pan and transfer to a heated platter.

Step:NO:03

Cook the carrots, onion, and garlic in the pan for five minutes, or until they are tender and brown.

Step:NO:04

 Add the rice, paprika, and cumin seeds, then thoroughly toss. Season, add the stock, and heat through. Cook the rice slowly for five minutes, stirring occasionally, until it becomes firm but not dry. Add the dill and season to taste.

Step:NO:05

Place the chicken thighs on top of the rice, place a lid on the pan, and bake for 20 to 25 minutes, or until the rice is soft and the chicken is cooked through. After mixing the rice with a fork, add more chopped dill on top, and serve.
