Stir-fried cauliflower with toasted peanuts

 This is a wonderfully meaty, vegan dish that comes together pretty quickly. Peanuts are toasted in oil to add flavor to the oil and to make the nuts crispier and more toasted. To ensure that the stir-fry stays beautiful and crisp-tender, broil the cauliflower before adding it to the skillet. This cooks off some of the water in the vegetable.

Ingredients:

  1. 1 cup jasmine rice
  2. 1 head cauliflower, cut into florets
  3. 3 tablespoons vegetable oil
  4. Kosher salt and freshly ground pepper
  5. 1/4 cup salted roasted peanuts
  6. 1 cup snow peas (about 4 ounces), trimmed
  7. 1 yellow bell pepper, roughly chopped
  8. 2 tablespoons chopped peeled fresh ginger
  9. 3 scallions (white parts sliced, green parts cut into 2-inch pieces)
  10. 1/3 cup sweet Thai chili sauce
  11. 1 1/2 teaspoons low-sodium soy sauce
  12. 1/4 cup fresh cilantro


Instructions:

Step:NO:01

Set the broiler to high. As instructed on the label, cook the rice. In the meantime, put the cauliflower out on a rimmed baking sheet and mix it with two tablespoons vegetable oil and a big sprinkling of salt and pepper. For approximately ten minutes, or until gently browned and tender, broil, stirring periodically.

Step:NO:02

In a large, nonstick skillet, heat the remaining 1 tablespoon of vegetable oil over high heat. Add the peanuts and heat for approximately a minute, stirring occasionally, until they are lightly toasted. Using a slotted spoon, transfer to a small bowl and sprinkle with salt and pepper.

Step:NO:03

Ginger, bell pepper, and snow peas should all be added to the skillet. Simmer for one to two minutes, stirring periodically, or until crisp-tender. Toss in the cauliflower and scallions (green and white halves). After adding the soy sauce and chili sauce, sauté the vegetables for another two minutes or so, turning frequently, until they are glazed.

Using a fork, fluff the rice and then add the stir-fry, toasted peanuts, and cilantro to each plate.
