Easy Healthy Banana Muffins

 I try not to use superlatives, but I have to say this: these are the BEST Healthy Banana Muffins! They are a reader favorite as well as something I have been baking for over ten years. Made with Greek yogurt, pure maple syrup, and nutritious grains, they are incredibly fluffy, moist, and flavorful with bananas!

Ingredients:


  
  1. 3 large overripe bananas about 1 1/2 cups mashed
  2. 1 large egg
  3. 1/3 cup nonfat plain Greek yogurt
  4. 2 tablespoons canola oil or melted and cooled coconut oil
  5. 1/3 cup light brown sugar
  6. 1/4 cup maple syrup
  7. 1 teaspoon pure vanilla extract
  8. 1 teaspoon baking soda
  9. 1/4 teaspoon kosher salt
  10. 1 teaspoon ground cinnamon
  11. 1 1/2 cups white whole wheat flour
  12. 1 cup walnut halves toasted and coarsely chopped



Instructions:

Step:No:01

Preheat the oven to 350°F and place the rack in the upper third of the oven. A 12-cup muffin pan can be lightly oiled with nonstick spray or lined with paper or foil liners.

Step:No:02

In a large basin, mash the bananas until they are nearly smooth.

Step:No:03

After adding the oil and yogurt, whisk in the egg. Add the vanilla, maple syrup, and brown sugar and whisk. Add the cinnamon, baking soda, and salt on top, and mix everything together.

Step:No:04

Fold in the walnuts after adding the flour and stirring just long enough to barely incorporate.

Step:No:05

Fill each cup almost to the brim of the muffin tin by spooning the mixture in. A toothpick inserted in the center should come out clean after 20 to 22 minutes of baking, and the muffins should faintly bounce back when touched in the center.
