These healthy Baked Chicken Meatballs are simple, but excellent. They're moist, flavorful, and perfect on their own (or paired with your preferred tomato or marinara sauce). They're also packed with a secret serving of spinach.

Ingredients:

  
  1. 1 large egg
  2. 1 pound ground chicken (I like 93% lean)
  3. 1/2 cup whole wheat panko breadcrumbs
  4. 1/3 cup Parmesan cheese finely grated
  5. 2 tablespoons extra-virgin olive oil divided
  6. 1 teaspoon dried oregano
  7. 1/2 teaspoon garlic powder
  8. 1/2 teaspoon onion powder
  9. 1/2 teaspoon kosher salt
  10. 1/4 teaspoon red pepper flakes
  11. 2 tablespoons tomato paste divided
  12. 3 tablespoons flat-leaf parsley finely chopped
  13. 2 1/2 cups fresh spinach lightly packed


Directions:

Step:No:01

Put together the binder. In a big bowl, beat the egg and add all the ingredients except for the tomato paste and 1 tablespoon of olive oil.

Step:No:02

Mix. Combine everything with a gentle stir. Avoid overworking the flesh!

Step:No:03

Form. Shape into meatballs and place in the ovenproof dish.

Step:No:04

Complete. Blend the leftover oil and paste with a whisk. Dredge a coating over the chicken meatballs. Bake the chicken meatballs for 18 to 22 minutes at 400 degrees Fahrenheit, or until they are well cooked. Then, serve. GLADLY
