In less than 30 minutes, savor this healthy, homemade chicken Alfredo that tastes rich, creamy, and cheesy but contains a fraction of the calories and fat of restaurant versions! Present the nutritious alfredo sauce alongside whole wheat noodles and vegetables to create an immediate hit among the family!

Ingredients:

  1. lbs chicken breasts or thighs cubed
  2. 11 oz whole wheat or gluten free fettuccine linguine or spaghetti
  3. 1 tbsp oil
  4. 1 cup stock low sodium
  5. 2 cups cold 2% or 3.25% milk
  6. 2 tbsp cornstarch
  7. 1/2 tsp salt
  8. Ground black pepper to taste
  9. 1/2 cup Parmesan cheese grated
  10. 1 garlic clove grated
  11. 3 cups frozen peas broccoli or chopped spinach
  12. 2 tbsp parsley for garnish

Instructions:

Step:No:01

Pour water into a big saucepan and heat it until it boils.

Step:No:02

Combine the milk, cornstarch, chilled stock, and 1/2 tsp salt in a medium-sized basin and mix using a fork. Put aside.

Step:No:03

Meanwhile, heat up a large, deep ceramic nonstick skillet over medium heat, swirling to coat with oil.

Step:No:04

After lightly seasoning the chicken with salt and pepper, place it in a skillet and cook it for ten minutes, stirring now and then.

Step:No:05

Put the pasta in boiling water with a teaspoon of salt while the chicken cooks. Cook pasta until al dente, tossing occasionally to prevent noodles from sticking, 7 minutes.

Step:No:06

Whisk the cornstarch mixture and pour it into the skillet. After stirring and bringing to a boil, simmer for two minutes, or until thickened and bubbling.

Step:No:07

Once the cheese has melted, add the garlic and Parmesan cheese and mix.

Step:No:08

Noodles should be moved straight from the pot to the skillet using tongs. No need to use a strainer to drain. Grasp several at a time, briefly hold them directly over the pot, and then transfer them to the skillet.

Step:No:09

Add spinach, broccoli, or peas and stir. Give the chicken alfredo a minute to warm through.

Step:No:10

Remove from the fire and sprinkle with the black pepper and parsley. Warm up the food.
