creamy tuscan chicken pasta

Full of Tuscan flavors, this recipe for healthy one-pot Tuscan Chicken Pasta is creamy, cheesy, and garlicky! Moreover, this nutritious chicken pasta recipe takes less than 30 minutes to prepare and can be made gluten-free!

Ingredients:

  1. 1 lb boneless & skinless chicken breasts or thighs
  2. 3 cups vegetable or chicken broth low sodium
  3. 3 cups short pasta like penne fusilli or bow ties
  4. 1 red bell pepper diced
  5. 1 tbsp oil for frying
  6. 1 tsp Italian seasoning
  7. 1/2 cup sun dried tomatoes chopped
  8. 2 cups spinach
  9. 2 cups whole milk
  10. 2 tsp cornstarch
  11. 1/2 cup Parmesan cheese grated
  12. 1 large garlic clove grated
  13. 1/2 tsp salt divided
  14. Ground black pepper to taste

Instructions:

Step:No:01

Heat up a big Dutch oven or heavy pot to medium and coat with swirling oil.

Step:No:02

Sprinkle 1/4 tsp salt and ground black pepper over the chicken. For 3–4 minutes on each side, sear.

Step:No:03

Add the remaining 1/4 tsp salt, bell pepper, pasta, broth, and Italian spice. Bring to a boil, cover, and whisk gently.

Step:No:04

To keep the spaghetti from sticking, reduce heat to medium and simmer for 10 minutes, stirring once every 2 minutes. Remember that wheat pasta cooks more slowly than gluten-free spaghetti. Al dente pasta is the ideal texture—not too mushy, to prevent mush.

Step:No:05

Transfer the chicken to a chopping board or dish.

Step:No:06

After whisking cold milk and cornstarch in a large measuring cup, pour the mixture over pasta. Gently stir, then bring to a boil and simmer until the sauce slightly thickens, about one minute.

Step:No:07

Add the garlic, spinach, Parmesan cheese, and sun-dried tomatoes after turning off the heat. To allow the flavors to meld, cover for a few minutes.

Step:No:08

While waiting, thinly slice the chicken.

Step:No:09

Stir the chicken gently into the saucepan, then serve right away. One of those meals that tastes best immediately after cooking is Tuscan chicken spaghetti. It's at its sauciest, the spinach fresh and not overly wilted.
