best chili mac and cheese

With the additional cheesy delight of mac and cheese, chili mac and cheese tastes just like your favorite chili! This delicious one-pot meal for dinner with ground beef can be prepared in less than 20 minutes. It's incredibly delicious!

Ingredients: 

  1. 1 tbsp olive oil
  2. 2 garlic cloves , minced
  3. 1 onion , finely chopped
  4. 1 red capsicum / bell pepper , chopped
  5. 500g / 1 lb ground beef (mince) , I use lean
  6. 800g / 28 oz crushed canned tomato
  7. 420g / 14 oz can red kidney beans , drained
  8. 2 1/2 cups (625 ml) beef broth (chicken broth also ok)
  9. 250g / 8 oz elbow macaroni pasta (elbow pasta), uncooked
  10. 2 cups (200g) shredded cheese (cheddar, Monterey Jack, tasty cheese)
  11. 1/4 cup coriander / cilantro finely chopped, for garnish

Spices [Homemade Chili Powder]

  1. 1 tsp cayenne pepper or pure chilli powder (adjust spiciness to taste) (Note 1)
  2. 2 tsp paprika powder
  3. 2 tsp cumin powder
  4. 1 1/2 tsp onion powder (can sub garlic powder)
  5. 1 tsp dried oregano
  6. 1/2 tsp black pepper
  7. 1 1/4 tsp salt


Instructions:

Step:No:01

In a big pot, heat the oil over high heat. Sauté the onion and garlic for one minute. Once the onion is transparent, add the capsicum and continue cooking.

Step:No:012

As you cook, break up the beef as you add it.

Step:No:03

After the meat turns brown instead of red, mix in the remaining ingredients, excluding the cheese. Reduce the heat to medium after stirring and bringing to a simmer.

Step:No:04

 Once the macaroni is al dente—that is, just cooked but still somewhat firm—cover and simmer for 12 minutes. It ought to be juicy without being very watery (see the video).

Step:No:05

While the saucepan is still on the stove, turn off the stove. Mix in half of the cheese; the mixture should be slightly runny. To taste, add more salt or pepper. Reinstall the cover, top with the remaining cheese, and let it melt for about two minutes (the sauce will continue to absorb during this time).

Step:No:06

If preferred, top with coriander and serve right away.
