Easy vegan pizza

 Most of the adjustments I made to make my home quasi-vegan were successful. However, sticking to our cherished Friday night pizza habit and switching to a plant-based diet didn't. Vegan cheese is not available at our favorite local takeaway restaurant, and their sauce contains Parmesan. 

Ingredients:

  1. 2 pounds pizza dough, homemade or store-bought
  2. Olive oil, for greasing the pizza dough and baking sheet
  3. Flour, for dusting the counter
  4. Cornmeal, for dusting the pan or pizza peel
  5. 3/4 to 1 cup pizza sauce, homemade or jarred (check to see it’s vegan)
  6. 1 batch homemade vegan mozzarella (see below), or 7 to 8 ounces vegan mozzarella-style shreds
  7. Optional toppings: fresh basil, vegan pepperoni or cooked vegan sausage, mushrooms

Easy vegan mozzarella.

  1. 5 tablespoons tapioca flour
  2. 2 tablespoons nutritional yeast
  3. 1/2 teaspoon sugar
  4. 1/2 teaspoon salt
  5. 1 1/2 cups water
  6. 6 tablespoons oil
  7. 2 teaspoons apple cider vinegar


Instructions:

Step:No:01

Partition the dough: At least a day in advance of the pizza's preparation, coat a baking sheet with olive oil. Separate the dough into four balls (to make four 8-inch pizzas) or two balls (to make two 14-inch pizzas). Each dough piece should have its outer skin tightly stretched and pinched at the bottom to form a tight ball. It should then be lightly rubbed with olive oil and placed seam-side down on the sheet. After letting it rise for about 8 hours in the fridge or 1 hour on the counter, cover it and allow it to double.

Step:No:02

Preheat the oven: Set the temperature to 500°F 20 to 30 minutes before you intend to bake the pizzas. Place a rack in the middle and place a baking stone or an upside-down baking sheet on top to preheat.

Step:No:03

Prepare the cheese: In the meanwhile, preheat the oven and prepare the vegan mozzarella, if utilizing. In a deep medium pot, combine the tapioca flour, sugar, nutritional yeast, and salt. Whisk together the water, oil, and vinegar after adding them. Turn the heat up to medium-high and stir often while cooking. The mixture will start to change from being thin and watery to thick and bouncy after three to five minutes.
Reduce the heat to medium and cook, whisking constantly, until big bubbles start to gently rise to the surface. The cheese will be a sticky, gooey lump when it's done. Though it may not seem very appetizing, once baked on the pizza, it will work perfectly. Take off the heat and place aside. 

Step:No:04

Shape the pizza: Starting from the center, carefully spread out one ball of dough with your hands on a counter that has been lightly dusted. Avoid mashing the borders of the dough unless you desire different sized bubbles in the baked crust. While you shape the other crust, put the dough aside and let it rest for a few minutes if it snaps back.
Form a circle about 14 inches in diameter if you are making two pizzas. Aim for a 7 to 8-inch circular if you are creating four smaller pizzas.
Sprinkle cornmeal onto a pizza peel or rimless cookie sheet, then place one round of dough onto the surface.
