Ingredients:
- 2 cups mashed very ripe banana, about 4 large
- ½ cup cane sugar or brown sugar
- ½ cup melted butter or vegetable oil, plus more for the pan
- 2 large eggs
- 1 teaspoon vanilla extract
- 1½ cups all-purpose flour, spooned and leveled
- 1 teaspoon baking soda
- ½ teaspoon sea salt
- ½ teaspoon cinnamon
- ¼ teaspoon nutmeg
- ½ cup chopped walnuts, plus 2 tablespoons for topping

Grease an 8x4 or 9x5-inch loaf pan and preheat the oven to 350°F.

Beat the mashed banana, sugar, butter, eggs, and vanilla together in a big basin.Step:No:03
Mix the flour, baking soda, salt, nutmeg, and cinnamon in a medium-sized bowl.Step:No:04
Mixing until just mixed, add the dry ingredients to the wet ones. Avoid overmixing. Stir in ½ cup of walnuts.Step:No:05
Transfer the mixture onto the ready pan and sprinkle the last two tablespoons of walnuts on top.Step:No:06
Bake for 50 to 60 minutes, or until the top bounces back when touched and a toothpick inserted into the center comes out clean. Forty minutes is when I like to check on the loaf.
