Ingredients:

Chinken:

  1. 1 lb Boneless skinless chicken breast (cut into 1-inch pieces)
  2. 1/2 tsp Sea salt
  3. 1/4 tsp Black pepper
  4. 2 large Eggs
  5. 3 oz Pork rinds (crushed)
  6. 2 tbsp Avocado oil

Orange sauce:

  1. 1 tbsp Avocado oil
  2. 2 cloves Garlic (minced)
  3. 1/2 cup Coconut aminos
  4. 1/4 cup White wine vinegar
  5. 2 tbsp Orange zest
  6. 2 tbsp Besti Powdered Monk Fruit Allulose Blend
  7. 1/2 tsp Ground ginger

Instructions:

Chinken:

Step:No:01

Use black pepper and sea salt to season the chicken.

Step:No:02

Whisk the eggs in a small bowl. Put the crushed pork rinds in a medium-sized basin.

Step:No:03

Heat the oil in a big skillet over medium-high heat.

Step:No:04

After dipping the chicken pieces in the egg and shaking off any excess, cover each side of the chicken with pork rind crumbs. (Alternatively, you might dip each piece of chicken individually in the crumbs after submerging them all at once in the egg.) Layer the chicken in the pan in a single layer, working in batches. Cook until cooked through and golden, a few minutes on each side.

Step:No:05

After taking the chicken out of the pan, cover it with foil to stay warm. Proceed with the leftover pieces of chicken. For the sauce, save the skillet.

Orange sauce:

Step:No:01

In the same skillet, warm the oil over medium heat while the chicken rests. When aromatic, add the garlic and sauté for about one minute.

Step:No:02

Incorporate the ground ginger, powdered monk fruit allulose blend, wine vinegar, orange zest, and coconut aminos. To deglaze the pan and remove any browned bits from the bottom, use a wooden spoon.

Step:No:03

After bringing the sauce to a mild boil, lower the heat, and simmer it for eight to ten minutes, or until it thickens and takes on a glossy appearance.

Step:No:04

After returning it to the pan, stir the chicken to coat. As the sauce cools from hot to warm, it will get thicker.
