The skin of these oven-baked chicken thighs with garlic herb butter is incredibly crispy, and the inside is exceptionally moist. Easy & basic to assemble!
Ingredients:
Compound butter:
- 1/4 cup Unsalted butter (softened)
- 2 cloves Garlic (crushed)
- 1/2 tbsp Fresh parsley (chopped)
- 1/2 tbsp Fresh dill (chopped)
- 1/8 tsp Sea salt
Chinken:
- 3 lb Bone-in chicken thighs (with skin)
- 2 tbsp Avocado oil
- 1/2 tbsp Sea salt
- 1 tsp Smoked paprika
- 1 tsp Garlic powder
- 1/4 tsp Black pepper
Instructions:
Step:No:01
Heat the oven to 450 degrees Fahrenheit, or 232 degrees Celsius. Use a high-quality non-stick pan (I like this one with the silicone covering) or line a baking sheet with foil.

Use a fork to crush the butter in a small bowl. Add the salt, garlic, and fresh herbs. Mash once more.Step:No:03
Using paper towels, pat the chicken dry before placing it skin-side up on the baking pan. To separate the chicken skin from the chicken underneath, run your hands under it. Apply generous amounts of compound butter under the skin, letting it spread out by pressing down on the skin.Step:No:04
Olive oil should be brushed or drizzled over the chicken on both sides. Add black pepper, garlic powder, smoked paprika, and sea salt to both sides.

Place the skin side down and bake the chicken thighs for ten minutes.Step:No:06
To turn the skin side up, flip the chicken thighs. Once the internal temperature hits 170 degrees Fahrenheit (77 degrees Celsius), roast for an additional 15 minutes or so.
