Ingredients:
Cauliflower rice:
- 1 tbsp Avocado oil
- 4 cups Cooked cauliflower rice
- 1/2 tsp Sea salt
- 1 10-oz can Diced tomatoes with green chilies (drained very well)
Vegetables:
- 1 tbsp Avocado oil
- 2 large Bell peppers (diced)
- 1/2 large Onion (diced)
- Sea salt (to taste)
- Black pepper (to taste)
- 1 cup Sour cream
Taco meat:
- 2 lb Ground beef
- 3/4 cup Water
- 1/4 cup Taco seasoning
Cheese topping:
- 2 cups Mexican cheese blend (shredded)

Cook the cauliflower rice in a skillet with 1/2 tsp (2.46 g) sea salt and 1 tablespoon (14.79 ml) avocado oil.

Add the diced tomatoes and green chilies that have been drained. Pour the mixture into the bottom of a glass casserole dish that measures 9 by 13. Put aside.Step:No:03
To get rid of any remaining cauliflower, clean the skillet. After heating an additional tablespoon of oil to a medium temperature, add the onions and bell peppers. Saute until tender and beginning to brown, about 10 to 15 minutes. To taste, add salt and pepper for seasoning.Step:No:04
In the casserole dish, arrange the vegetables on top of the cauliflower rice. Using a spatula, evenly spread the sour cream on top. Put aside.
