Optional topping:

  1. Tomatoes (diced)
  2. Jalapenos (sliced)
  3. Avocados (sliced)
  4. Fresh cilantro (chopped)

Instructions:

Step:No:01

Cook the cauliflower rice in a skillet with 1/2 tsp (2.46 g) sea salt and 1 tablespoon (14.79 ml) avocado oil.

Step:No:02

Add the diced tomatoes and green chilies that have been drained. Pour the mixture into the bottom of a glass casserole dish that measures 9 by 13. Put aside.

Step:No:03

To get rid of any remaining cauliflower, clean the skillet. After heating an additional tablespoon of oil to a medium temperature, add the onions and bell peppers. Saute until tender and beginning to brown, about 10 to 15 minutes. To taste, add salt and pepper for seasoning.

Step:No:04

In the casserole dish, arrange the vegetables on top of the cauliflower rice. Using a spatula, evenly spread the sour cream on top. Put aside.

Step:No:05

Set the oven's temperature to 400°F, or 204°C.

Step:No:06

Once the ground beef has been added, turn the heat up to medium-high. Cook, stirring occasionally with a spatula, until golden, about 10 minutes.

Step:No:07

Stir in the taco seasoning and water. When it thickens and the taco meat forms, simmer it for two to five minutes after bringing it to a boil.

Step:No:08

Across the casserole dish, equally distribute the beef mixture. Add some shredded Mexican cheese over the top.

Step:No:09

Bake for ten to fifteen minutes, or until the cheese is melted and the dish is heated.
