Easy Zucchini fritters

 This month, I've loved sharing my best zucchini dishes, but I couldn't resist including these very delicious zucchini fritters! I've loved these zucchini fritters for a long time. They're quick and simple to prepare, and they're made using basic ingredients. Who can resist those delicate insides and crunchy brown edges? Did I also mention that each serving costs less than $1, making them affordable? Really, what is there to dislike? If you enjoy zucchini as much as I do, you must try this recipe for zucchini fritters! ;)

Ingredients:

  1. 1 1/2 lbs. zucchini (2 large zucchini) ($2.00)
  2. 1/4 yellow onion, finely diced ($0.15)
  3. 1 garlic clove, minced ($0.08)
  4. 3/4 cup all-purpose flour ($0.20)
  5. 1/4 cup grated parmesan cheese ($0.40)
  6. 1 large egg, lightly beaten ($0.16)
  7. 1 tsp salt, divided ($0.08)
  8. 1/2 tsp freshly cracked black pepper ($0.04)
  9. 3 Tbsp cooking oil ($0.12)
  10. For Serving
  11. Tzatziki Sauce


Instructions:

Step:NO:01

After giving the zucchini a thorough cleaning and cutting off the stem, grind the vegetable using a box grater with big holes. You should have roughly 4 cups of grated zucchini at the end.

Step:NO:02

Grate the zucchini and place it in a colander or cheesecloth with fine mesh over a basin. Add a tsp and a half of salt to the zucchini. Mix the zucchini briefly and let aside for fifteen minutes. After 15 minutes, drain as much liquid as you can into the basin or over the sink using the cheesecloth or clean hands.

Step:NO:03

Grate the zucchini and add it to a big bowl with the finely chopped onion, garlic, egg, flour, parmesan cheese, and a scant teaspoon each of salt and freshly ground black pepper. Combine all of the ingredients and stir until thoroughly

Step:NO:04

Heat the cooking oil in a sizable nonstick skillet over medium-high heat. When the oil is hot, create tiny pancake-sized patties by adding several spoonfuls of the zucchini mixture to the hot skillet. Using the back of a spoon or a spatula, gently flatten the tops of each fritter, and cook for about 3 minutes on each side, or until golden brown. To prevent overcrowding in the pan, cook the fritters in two batches.

After taking the fritters out of the pan, drain them on a platter covered with paper towels or a wire rack. As soon as possible, serve and savor them hot!
