Easy Orzo Pasta Salad

 There are lots of vibrant vegetables in this light and fresh orzo pasta salad, along with a tasty homemade vinaigrette. Ideal for weekly meal prep or barbecues!

Ingredients:

Vinaigrette Dressing.

  1. 1/3 cup olive oil ($0.96)
  2. 3 Tbsp white wine vinegar ($0.39)
  3. 1/2 Tbsp Dijon mustard ($0.04)
  4. 1 clove garlic, minced ($0.08)
  5. 1/2 tsp dried basil ($0.05)
  6. 1/4 tsp salt ($0.02)
  7. 1 Tbsp honey ($0.18)

Pasta Salad.

  1. 1 1/2 cups uncooked orzo pasta ($1.49)
  2. 1 cup frozen corn ($0.41)
  3. 1 red bell pepper ($1.59)
  4. 1 yellow bell pepper ($1.59)
  5. 2 roma tomatoes ($0.78)
  6. 1/2 red onion ($0.40)
  7. 3/4 cup dried cranberries ($1.70)
  8. 1/4 cup fresh chopped parsley ($0.29)
  9. 1/4 tsp salt ($0.02)


Instructions:

Step:NO:1

Prepare the vinaigrette dressing first. Olive oil, white wine vinegar, Dijon mustard, minced garlic, basil, salt, and honey should all be combined in a medium-sized bowl and whisked until smooth. Discard the vinaigrette.

Step:NO:2

Follow the instructions on the package to cook the orzo pasta. In the final three minutes of the pasta cooking time, add the frozen corn to the boiling water. To chill the pasta, drain it along with the corn in a strainer and give it a quick rinse with cool water.

Step:NO:3

Prepare the vegetables while the pasta cooks. Chop the parsley, measure out the dried cranberries, dice the tomatoes and bell peppers, and dice the red onion finely.

Step:NO:4

Pasta and corn should be transferred to a big basin. Add the dried cranberries, chopped parsley, and chopped veggies.

Step:NO:5

Repeatedly whisk the vinaigrette dressing. After adding 1/4 tsp of salt for seasoning, pour the dressing over the pasta salad. Mix all of the salad ingredients together until the dressing coats each item equally. Serve right away or put in the fridge until you're ready to eat.
