grilled vegetables on the gril

 These simple grilled veggies require only a few ingredients and a simple grilling technique, making them the ideal side dish for any summer barbecue!

Ingredients:

  1. 8 mini bell peppers (or 2 large bell peppers cut into ¼s) ($1.44)
  2. 1 zucchini ($0.93)
  3. 1 red onion ($1.23)
  4. 6-8 cherry tomatoes, whole on vine* ($1.66)
  5. 8 mushrooms** ($1.04)
  6. 1 yellow squash ($0.89)
  7. 1 ½ Tbsp olive oil ($0.27)
  8. 1 clove garlic, minced ($0.05)
  9. 1 tsp steak seasoning ($0.12)
  10. ½ tsp sugar ($0.01)


Instructions:

Step:NO:1

Using a knife or a mandoline set to the thickest setting, slice the zucchini lengthwise until it's approximately ¼ thick. Slice the yellow squash into thick discs that are about ¼ thick, destem the mushrooms, and cut the red onion into thick rings. Rinse cherry tomatoes and bell peppers.

Step:NO:2

In a bowl, whisk together sugar, ½ tsp steak seasoning, olive oil, and minced garlic.

Step:NO:3

Drizzle the vegetables with the olive oil mixture.

Step:NO:4

Preheat the grill to 400 degrees and add the onions. When you see noticeable grill marks, add the remaining vegetables on the grill and cook for 4 minutes.

Step:NO:5

When the vegetables are done to your liking, flip them over and cook for a further three to four minutes. I take care not to overcook my grilled veggies since I like them to still have some bite! When onions simmer down a little, they become nice and sweet and also flavor the grill for the other veggies. This allows onions to cook for a little longer.

Step:NO:6

Top with the last ½ tsp of steak spice and, if desired, pair with BudgetBytes chimichurri!
